Winter Cooking | Turkey + Pumpkin Chili

 

When you need a bowl of warmth + nourishment.

Turkey + Pumpkin Chili 

Ingredients: 
1 lb. ground turkey
2 tablespoons avocado (or olive oil)
1 onion | chopped
4 garlic cloves | chopped 
1 red bell pepper | chopped
2 tsp chili powder
2 tsp cumin
1 tsp dried oregano
2 tsp cinnamon 
1 tsp salt
1 can pumpkin puree
1 can diced tomatoes
1 can black beans | rinsed
1 can pinto beans | rinsed
2 c. chicken broth

Directions: 

  1. In a large pot over medium-high,  heat the avocado oil then add the chopped onion + peppers | cook until tender. 
  2. Add the ground turkey, breaking up with a spoon until cooked through. Add chopped garlic and cook until fragrant (30 seconds or so) 
  3. Gently stir in the chili powder, cumin, oregano, ground cinnamon, salt, pumpkin puree, diced tomatoes + chicken stock.
    Then add the black beans + pinto beans and stir. 
  4. Bring to a boil | Reduce to a simmer | Cook 20 mins.

 

Delicious topped with shredded cheese, sour cream or greek yogurt, cilantro, + chopped avocado!
