Winter Cooking | Turkey + Pumpkin Chili

 

When you need a bowl of warmth + nourishment.

Turkey + Pumpkin Chili 

Ingredients: 
1 lb. ground turkey
2 tablespoons avocado (or olive oil)
1 onion | chopped
4 garlic cloves | chopped 
1 red bell pepper | chopped
2 tsp chili powder
2 tsp cumin
1 tsp dried oregano
2 tsp cinnamon 
1 tsp salt
1 can pumpkin puree
1 can diced tomatoes
1 can black beans | rinsed
1 can pinto beans | rinsed
2 c. chicken broth

Directions: 

  1. In a large pot over medium-high,  heat the avocado oil then add the chopped onion + peppers | cook until tender. 
  2. Add the ground turkey, breaking up with a spoon + cooking until cooked through. Add chopped garlic and cook until fragrant (30 seconds or so) 
  3. Gently stir in the chili powder, cumin, oregano, ground cinnamon, salt, pumpkin puree + chicken stock.
    Then add the black beans + pinto beans and stir. 
  4. Bring to a boil | Reduce to a simmer | Cook 20 mins.

 

Delicious topped with shredded cheese, sour cream or greek yogurt, cilantro, + chopped avocado!
