Gluten-Free Key Lime Pie Bars

**For the Crust:**

- 1 1/2 cups gluten-free graham cracker crumbs
- 5 Tablespoons melted butter
- 2 Tablespoons sugar

**For the Key Lime Pie Filling:**

- 2 cans sweetened condensed milk
- 3 Egg yolks
- 1/2 cup sour cream
- 1 Tablespoon lime zest
- 1 teaspoon vanilla extract
- 3/4 cup key lime juice

**Instructions:**

1. Preheat the oven to 350 degrees Fahrenheit and line an 8x8 metal pan with parchment paper.

2. Begin by making the graham cracker crust. In a food processor or medium mixing bowl, combine the graham cracker crumbs, melted butter, and sugar. Pulse or stir until the mixture resembles wet sand.

3. Pat the crust into your prepared pan in an even layer, ensuring it reaches the edges.

4. Bake the crust for 8-10 minutes, or until it turns golden brown.Β 

5. While the crust is baking, prepare the key lime pie filling. In a large mixing bowl, combine the sweetened condensed milk, egg yolks, sour cream, lime zest, and vanilla extract. Whisk everything together until smooth. Gradually add the lime juice and blend until the filling is smooth.

6. Once the crust is out of the oven, pour the key lime pie filling over the baked crust.

7. Return the pan to the oven and bake for an additional 12-15 minutes to set the filling.

8. Remove the key lime pie bars from the oven and let them cool for 30 minutes. Then, transfer them to the refrigerator and chill for at least 2 1/2 hours, or until the filling is completely set.

9. Once the filling is set, top the pie bars with whipped cream and slice them before serving!
