Fall Baking | Pumpkin Scones


Pumpkin Scones
Delicate & Delicious.
When the cold weather hits and you turn to a cup of tea for warmth,
grab a scone for that extra cozy.
{ I always put a few in the freezer for later. I let them thaw overnight. }
Ingredients:
3 c flour
1/3 c sugar
1/2 tsp baking soda
2 & 1/2 tsp  baking powder
1/2 tsp salt
2 T ground ginger
4 T cinnamon
1 & 1/2 sticks butter cut into small cubes
1 & 1/4 c buttermilk
1 c canned pumpkin
2 T vanilla
Directions:
 
Preheat oven to 425 degrees
 
1 - In a large bowl, combine flour, sugar, baking soda, baking powder, salt, ginger,  & cinnamon
2- Crumble the butter into the dry mixture with your hands until both are thoroughly blended.
3- Make a well in the dry ingredients & pour in the buttermilk, pumpkin, and vanilla. mix with hands until combined.
4- Turn mixture onto floured surface and pat gently (do not knead) into a circle around 11/2" thick. Use biscuit cutter to make rounds.
5- Bake on parchment lined baking sheet for 12 mins or until lightly browned.
I like to drizzle them with powdered sugar glaze.
Mix 1 cup of powdered sugar with 2 T milk, and a small splash of vanilla.
