Pumpkin Cake Bars
1 2/3 cup sugar
1 cup oil (canola, vegetable or sunflower)
15 oz. canned pumpkin
2 cups flour
2 tsp. baking powder
2 tsp. cinnamon
1 tsp. salt
1 tsp. baking soda
1 tsp. vanilla
Preheat oven to 350°
Grease a 9x13-inch baking dish and set aside.
(I like to line my dish with parchment paper so I can lift the cake out to cool + cut)
In a bowl with stand mixer or using electric mixer beat eggs, sugar, oil, vanilla and pumpkin until smooth and creamy.
In a separate large mixing bowl, combine flour, baking powder, baking soda, salt and cinnamon. Add the dry ingredients to the pumpkin mixture. Mix at low speed until combined.
Spread batter into pan and bake for 30-35 minutes. (Test with toothpick to make sure it’s done.)
Cool, (sprinkle with powdered sugar or frost with buttercream - mmm) cut into bars and enjoy! Xo
