Fall Baking | Banana Cupcakes with Cream Cheese Frosting

Light + fluffy.
Creamy + unpretentious.
Absolutely delicious.

Banana Cupcakes with Cream Cheese Frosting
Ingredients:
2 ripe bananas | mashed
3/4 c vegetable or canola oil
1 c sugar
2 eggs
1/2 tsp vanilla 
1 c flour
1 tsp baking soda
1/4 tsp salt
Preheat oven to 350 degrees
 
In large bowl use mixer to cream together the oil + sugar.
Add the eggs + vanilla until smooth.
 
In another bowl, mix the flour, baking soda and salt.
On low speed, add flour mix until combined. Fold in mashed bananas by hand.
Bake 15-20 mins or until done. Test with a toothpick.
Once cool, frost + devour!
I topped mine with crushed pecans. enjoy! xo 
Cream Cheese Frosting Ingredients:
1/c butter | 1 stick
1 & 1/2 cups cream cheese softened
3 c powdered sugar
Use mixer to mix until combined, at lowest speed, add the powdered sugar slowly until creamy + smooth.
